
Why Sour Beers?
When the opportunity came to pour his energy into sour beers, he embraced it with open arms. “Turns out, it’s a lot of fun. It’s a little bit of a playground for me.” But what makes sour beer different than any other brewing process? Dennis will tell you every time: the ultimate key to any sour beer—bacteria. “Sour beers are very complex. You can do it in a controlled manner…you add bacterias and you’re infecting the beer on purpose. That’s what we call a kettle sour.” Then there’s a walk on the wild side: the uncontrolled sours. “Wild yeast and wild bacterias do the job for you during the fermentation process. It takes a long time to fine tune the flavor profiles, but that’s what makes it interesting.”
